Sate Ayam (Chicken Skewer)

Ingredients

You’ll need

  • 600 grams chicken thigh fillet
  • Bamboo skewers (soaked)
  • Mamam's Sate BBQ Sauce

Marinade

  • 3 clove garlic (optional)
  • 5 pc shallot (optional)
  • 1 tsp coriander (optional)
  • 5 tbsp sweet soy sauce
  • 1 pc lime
  • 1 tsp salt
  • 1 tsp stock powder / MSG
  • ¼ tsp pepper
  • 300 ml water

Add-ons

  • Sliced shallot
  • Boiled red Thai chili
  • Rice
  • Kaffir lime
  • Sweet soy sauce

Steps

  1. Slice the chicken into long strips. Set aside in a bowl.
  2. Blend the shallots, garlic, and coriander with water until smooth. Add into the chicken.
  3. Add sweet soy sauce, salt, stock powder, pepper, and lime juice. Stir evenly, then cover with plastic wrap and marinate in the fridge overnight.
  4. For the sauce, heat some oil and sauté the red Thai chili, garlic, and shallots. Set aside.
  5. Skewer the meat. Heat the pan and add a bit of butter or oil.
  6. Add the skewered chicken into the pan. Cook until both sides are browned. Lower the heat, then cover the pan and let it cook.
  7. Chicken Sate is ready to serve with Thai chili, kaffir lime, rice or ketupat, and sliced shallots on the side. Add more sweet soy sauce according to taste.
