You’ll need
- 600 grams chicken thigh fillet
- Bamboo skewers (soaked)
- Mamam's Sate BBQ Sauce
Marinade
- 3 clove garlic (optional)
- 5 pc shallot (optional)
- 1 tsp coriander (optional)
- 5 tbsp sweet soy sauce
- 1 pc lime
- 1 tsp salt
- 1 tsp stock powder / MSG
- ¼ tsp pepper
- 300 ml water
Add-ons
- Sliced shallot
- Boiled red Thai chili
- Rice
- Kaffir lime
- Sweet soy sauce
Steps
- Slice the chicken into long strips. Set aside in a bowl.
- Blend the shallots, garlic, and coriander with water until smooth. Add into the chicken.
- Add sweet soy sauce, salt, stock powder, pepper, and lime juice. Stir evenly, then cover with plastic wrap and marinate in the fridge overnight.
- For the sauce, heat some oil and sauté the red Thai chili, garlic, and shallots. Set aside.
- Skewer the meat. Heat the pan and add a bit of butter or oil.
- Add the skewered chicken into the pan. Cook until both sides are browned. Lower the heat, then cover the pan and let it cook.
- Chicken Sate is ready to serve with Thai chili, kaffir lime, rice or ketupat, and sliced shallots on the side. Add more sweet soy sauce according to taste.
